- Apple Cinnamon Muffins

- Ingredients for muffins:
- 1 cup (140 g) all-purpose flour
- 1/2 cup (70 g) whole wheat flour
- 2/5 cup (75 g) white sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/3 cup (75 g) vegetable oil
- 1 egg
- 2 apples - cored and chopped
- Ingredients for topping:
- 1/4 cup (25 g) white sugar
- 1/4 cup (35 g) all-purpose flour
- 1/4 cup (57 g) butter, cubed
- 1 teaspoon ground cinnamon
Directions
- Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups.
- From the list of ingredients for muffins, stir together all-purpose and whole wheat flour, sugar, salt, baking powder and cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups.
- In a small bowl, stir together ingredients for the topping: sugar, flour, butter and cinnamon. Mix together with fork and sprinkle over unbaked muffins.
- Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.
I made a lot of adjustments from the original recipe - swapping out some whole wheat flour for white, cutting the sugar in the muffins, leaving the apple peels on, and halving the amount of topping. This makes muffins that are just sweet enough to be dessert, but could also be happily eaten for breakfast without feeling too guilty...
